They have also taught the method of how eggs should be cooked and eaten.

Italian biochemist Pellegrino Musto and Ernesto De Maio and their colleagues have been researching egg cooking techniques for a long time. They have also created a mathematical model for this. They have created a special algorithm on the computer to see how to cook eggs at exactly the right temperature, and how the nutrients contained in the egg white and yolk will be absorbed into the body in the right amount. This research has also been published in a scientific journal called 'Communication Engineering'.

Scientists claim that if eggs are boiled in water at a temperature of 100 degrees Celsius, the egg white becomes hard, and the protein in it is destroyed. In addition, vitamins A, D, E and K contained in the yolk are destroyed at high temperatures. The amount of minerals such as choline and selenium also varies.

So how should eggs be cooked?

The method that scientists are talking about is called 'periodic cooking'. What is it exactly? Scientists say that you need to take water in two pots. The water in one pot should be heated on low heat. It is best if the temperature is around 87-100 degrees Celsius. The water in the other pot should be at room temperature, preferably 30 to 35 degrees Celsius. This time, the egg should first be kept in hot water for 2 minutes and then dipped in cold water at room temperature. It should be kept there for a couple of minutes and then again in hot water for 2 minutes. In this way, the egg should be boiled by keeping it in hot and cold water alternately. This method should be done 16 times, which will take about 32 minutes.

Although it may sound complicated, scientists say that cooking eggs this way will neither harden the egg whites nor the yolk, nor will it be too soft or raw. The proteins, vitamins, antioxidants, and minerals contained in it will also remain intact and all will enter the body. This will have many benefits.
